This naner bread, as my sister calls it, is something I make alot of. I have changed it around over the years and even still will play with the toppings. The ingredients are:
1/2 cup all purpose flour
1 1/4 tsp baking powder
1/2 teaspoon baking soda
3/4 tsp cinnamon
1/8 tsp salt
2 egg whites, beaten slightly for about 15 seconds
3 mashed bananas
1/2 cup sugar
1/4 cup light olive oil
Cook at 350 for 45 minutes. Some things to keep in mind…
- Remember when using polish pottery, it is not necessary to put alot of non stick spray. If you need to use it, keep it to a minimum.
- You don’t have to have exactly three bananas, just about that much. Mash them with a fork, it does not have to be mashed to complete mush. We like ours lumpy.
- Mix the wet ingredients and dry separately. Add the dry to the wet.
- Be creative with the toppings. We like a little brown sugar and walnuts but you can drizzle chocolate, use a mix of different nuts or just leave it plain.
